There is nothing that says summer like fresh blue berries and my favorite recipe is Blueberry Buckle. It is essentially a blueberry crumb cake, yum, yum! My favorite blueberries are picked at Monadnock Berries. You can pick you own our go to their farmstand. While you are picking you can get a great view of Mount Monadnock.
Prepare a 9 x 9 pan. Lightly spray with cooking oil. Preheat oven to 375 degrees.
2 C Flour
2 t Baking Powder
3/4 C Sugar
1/2 t Salt
1/4 C Melted and Cooled Butter
1/2 C Milk
1 t Vanilla
2 C Blueberries
1/4 C Sugar
1/4 C Brown Sugar – cut into small pieces
1/3 C Flour
2 T Butter (unsalted is best)
1/2 t Cinnamon
Mix dry ingredients in a large bowl. In a separate bowl mix butter, egg and milk. Once combined mix into dry ingredients. When you are almost fully mixed fold in the blueberries. Do not over mix. Pour into prepared pan.
In a small bowl put all the topping ingredients together and cut with 2 knives. Should have pea sized crumbles before sprinkling evenly over the top of the cake.
Bake for 45 minutes or until toothpick come out clean. Cool on rack. Enjoy!
