Blueberry Buckle

What a great dessert for a picnic or a brunch! Now is the time of year to use those fresh blueberries. Below is a great recipe for Blueberry Buckle.

Blueberry Buckle
2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons of baking powder
3/4 teaspoon of salt
1/4 cup shortening
3/4 cups milk
1 egg
2 cups of blueberries

Heat oven to 375 degrees. Grease round layer pan, 9 x 1 1/2 inches, or square pan, 8x8x2 or 9x9x2 inches. Blend all ingredients except topping (below); beat vigorously 1/2 minute. Spread in pan.

Sprinkle topping over batter. Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean. Serve warm. 9 to 12 Servings.

Topping:
Mix 1/2 cup sugar, 1/3 cup all-purpose flour, 1/2 teaspoon cinnamon and 1/4 cup soft butter; sprinkle over batter in pan.
