Pumpkin Cookies

It’s that time of year again. Autumn, I just love the crisp air, apples, foliage and pumpkins. There are so many great things you can create with pumpkins. They make great fall/holiday table decorations. When we think of pumpkins we think carving and pumpkin pie. But what about some amazing pumpkin cookies; they are truly delicious.

½ cup margarine
1 ½ cup sugar
1 egg
1 cup canned pumpkin
1 tsp. vanilla
2 ½ cup flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 cup chocolate chips
½ cup nuts (optional)

In a large bowl cream butter and sugar together until light and fluffy. Beat in egg, pumpkin, and vanilla. In a separate bowl mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Add to creamed mixture and mix well. Add nuts and chocolate chips thoroughly. Drop by teaspoon onto a well-greased pan. Bake at 350 degrees for 15 minutes. Makes about 3 dozen.
