Roasted Potatoes by Karen

If you are a potato lover this is must make! The roasted flavor of the potatoes and herbs is amazing. A great dish with beef, chicken or fish.

  • 3/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons minced fresh rosemary thyme leaves
  • 1 1/2 pounds small red or white-skinned potatoes (or a mixture)
  • 1/8 cup extra virgin olive oil

Preheat the oven to 400

Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, rosemary and thyme. Toss potatoes to coat with seasonings. Place the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 45 minutes to one hour, or until browned and crisp. To ensure even browning Flip twice during cooking.
